Chicken & Vegetable Black Bean Pasta



Olive oil spray

3/4 cup Organic black bean Rotini 

2 cups kale

1/2 bell pepper

4 grape tomatoes 

Tbsp. chopped white onion

4 oz. chicken

Tsp. cilantro

Spoonful fresh salsa

Prep time: 10 minutes

Cook time: 12 minutes


Start boiling water for the pasta. Let come to a boil and add a serving of black bean pasta. Then add all other ingredients, except the fresh salsa, to a separate non-stick pan or a pan lightly coated with olive oil spray. The chicken should be pre-cooked before making this meal. The kale will cook down. Add more as desired. Any other seasonings can be added with the cilantro. Salt, pepper, garlic powder, and onion powder are recommended. Once the black pean pasta is ready, drain the excess water, combine all ingredients in a bowl and add the fresh salsa to the top. A simple, healthy, and delicious meal!

This meal is not extremely low in carbs, but it’s a great alternative for regular pasta!
